Chicken Adobo sa #KusinaNiKayne
Here are the ingredients:
- 1 whole chicken (chopped)
- 1 ginger sliced (at least 1 inch)
- 1 whole garlic sliced
- 1 big onion sliced
- 1/4 cup vinegar (apple cider, white vinegar, sugar cane vinegar etc.)
- 1/2 cup soy sauce
- 1 teaspoon brown sugar (feel free to adjust up to 2-3 teaspoon depending on your preferred sweetness)
- 5-8 bay (laurel) leaves
- peppercorns
- toasted garlic (optional) for garnish
- 2 - 4 Boiled eggs (or more) - optional
- oil
- a little water to adjust taste
How:
- Saute' onion first until translucent, add garlic and ginger
- Add chicken and mix and turn until light brown (this may take around 5-8 minutes)
- Add soy sauce. laurel (bay) leaves and peppercorn. Mix
- Let this boil for 10-15 minutes or you can go up to 25 mins (the longer you simmer the more the flavor incorporates to the chicken)
- Add the vinegar. Do not stir. Simmer again for another 5-10 minutes. Turn off the heat.
- On a skillet/pan, transfer the chicken and let it cook (frying it) on its on oil. Turn as the chicken turns brown.
- On the first pan, add you sugar and mix it. Simmer for another 2 minutes. Then transfer the sauce to the skiller/pan that you fry the chicken.
- Add your boiled eggs.
- Simmer another couple of hours and your Chicken adobo will be ready to serve!
- Optional - Add the toasted garlic as garnish. You may also add a fresh circled sliced onion on top of it.
